Luke Whearty is the mad-genius bartender behind Operation Dagger in Singapore. Anyone who knows anything about that joint knows it’s one of the most imaginative, off-the-wall, rule-twisting cocktail bars on earth. But it’s not the only watering hole Whearty has his paws In. His other gig is the year-old Outrage of Modesty in Cape Town, South Africa.
The sketches below are from a new seasonal menu. If the ingredients seem unfamiliar, that’s because many of them are unique to South Africa, including sour figs, a.k.a. ice plants; wild fynbos shrubs, a key botanical in locally made gins like Hope On Hopkins and Woodstock Gin Co.; and spaanspek, a summer melon whose name loosely translates as “Spanish bacon.” No idea why, but damn that sounds delicious.
