Don’t bother ordering a Stoli and soda at Singapore’s Operation Dagger. The spirits on the bar’s back wall have been stripped of their branding and poured into brown medicinal bottles with handwritten labels. Creative director Luke Whearty’s (also of Oxford & Co) menu is equally mysterious, listing only a drink’s non-alcoholic components (e.g., The Egg, made with salted egg yolk, caramel, star anise, and hay; and the Gomashio, fashioned from sesame, cucumber, ginger, and citrus), and never the intoxicant within. The idea being: People discriminate against certain liquors because they think they don’t or won’t like them. Stop that! If ever you’re going to be turned on to a new firewater, it’ll be here, in the deft hands of some of Singapore’s finest bartenders. Bonus: Many drinks involve vigorous shaking, torching, and flame-throwing. Grab a front-row seat at the bar if you can—the show is well worth the price of admission.
