“Sippin’ and rippin'” is the skate park-inspired motto coined by Indy Coffee Co. in San Antonio. Launched as a latte-slinging truck by four close friends (Jake Scott, Alex Lee, Andrew Kim, and Henry Shi) in the summer of 2014, it’s now the pillar of a close-knit, Parlor-fueled community 20 minutes north of downtown and directly below the University of Texas San Antonio campus. While it didn’t take long for them to make the jump to a brick-and-mortar location, Scott and Lee were quick to credit their last gig—pulling shots behind the bar at Local Coffee‘s Sonterra Boulevard location—for sharpening their third-wave skills. That’s the thing about San Antonio, though; everyone’s in it together, determined to get the area’s growing food-and-drink scene the national attention it deserves. So go for the coffee, go to work, go to admire the arty decks nailed to wall, but really, go for the community.
