The honky-tonk interior at the unmarked Shady Pines Saloon in Sydney looks like something out of an old Spaghetti Western. You’ve got moody yellow lighting, big-game taxidermy, a rickety upright piano, cacti and drip candles, and freshly shucked peanut shells on every tabletop. Add to that a daunting whiskey list and a country-fried soundtrack, and it’s no wonder co-owners Anton Forte and Jason Scott have hit upon another nightlife jackpot. (The duo also runs the cocktail-centric Baxter Inn and popular punk bar/arcade/red-sauce Italiano joint Frankies Pizza By the Slice.) There’s no line-dancing at Shady Pines, but the vibe is relaxed and convivial, and some cocktails come with a keepsake mug (good, btw, for discounted refills).
