Barrel + Brine on Buffalo’s West Side opened in December 2015, but it has already mastered juicy half-sours, spicy Bloody Mary pickles, horseradish dills, miso, kombucha, fire tonic, and unbelievably addictive pickled peanuts. Chef R.J. Marvin (formerly of Elm Street Bakery, Buffalo Proper, and Blue Monk) and his wife Lindsey have big plans for the store in the months ahead, including the introduction of a small sandwich menu, in-house pickling classes, and other fermented offerings to keep your gut in check.
