Heidi Hays is one busy baker. The proprietor of North Lime Coffee & Donuts shuttles between a custom cake shop in Lexington, Kentucky, and two popular cafes. A third donut shop is in the works for Louisville.

Hays toys with some pretty trippy flavors: brown sugar and molasses, funnel cake, vegan cookie butter, maple bacon, spiced French toast, bourbon caramel, and cereal-coated tributes to Trix, Lucky Charms, Count Chocula, and Fruity Pebbles. She’s also known for her sugary riffs on pop culture: the Barb from Stranger Things donut was orange-ginger spice cake topped with vanilla-orange buttercream; the Heisenberg from Breaking Bad was a chocolate cake donut slapped with buttercream icing and dusted with crunchy bits of candied “blue meth.” To wash it all down, look to the specialty coffee menu of pour-overs, cold brew, and cortados.
