The Pie Maker Bakery in Cortez, Colorado, knows what’s up. Pastry chef Shoshana Winer opened her shop four years ago with sustainability as a core mission. She serves locally roasted Fahrenheit Coffee, uses all-purpose unbleached flour from nearby Cortez Milling, and sells ceramics and tea towels from local indie boutique Home & Range. But really, it’s all about the pie. Apple pies, brandied pear-and-dark chocolate pies, bourbon pecan pies (pictured), savory hand pies, cream pies, custard pies, flaky buttery delicious fruit pies—OMG, people, PIE. She makes ’em all.
