The Pie Maker Bakery in Cortez, Colorado, knows what’s up. Pastry chef Shoshana Winer opened her shop four years ago with sustainability as a core mission. She serves locally roasted Fahrenheit Coffee, uses all-purpose unbleached flour from nearby Cortez Milling, and sells ceramics and tea towels from local indie boutique Home & Range. But really, it’s all about the pie. Apple pies, brandied pear-and-dark chocolate pies, bourbon pecan pies (pictured), savory hand pies, cream pies, custard pies, flaky buttery delicious fruit pies—OMG, people, PIE. She makes ’em all. And you know what goes well with pie? Creamy nitro cold brew coffee. Order yours classic or with an earthy, not-too-sweet honey infusion.
