Fresh-to-death sushi burritos and poke bowls are having a moment in Las Vegas—and everywhere else in the U.S. One of the best places to house one is Tail & Fin in Henderson, about 15 minutes south of the Strip. Never mind its location in a sketchy retail mall, the kitchen is helmed by Karu Wedhas, a Nobu alum who isn’t afraid to experiment with unusual flavor combinations. The Flaming Tuna is rolled up or poke’d-out with spicy tuna, crab, seaweed salad, romaine, furikaki, jalapeños, and unagi sauce. The O.G. is ahi tuna, salmon, and yellowtail matched with lettuce, cucumber, green onion, and poke sauce. Burritos and bowls range from $7.95 for a vegetarian signature to $12.95 for a triple-fish threat.
