WVRST is Toronto’s best (BVST?) sausage party. Chef James Hall keeps 25 types of tube meat in rotation, including elk, guinea fowl, wild boar, rabbit, kangaroo, chorizo, traditional brats, and a good ol’ fashioned Italian, ground and stuffed with Sicilian fennel. Vegetarians might be tempted to the dark side upon smelling Hall’s award-winning duck fat fries; if not, regular frites and one of three meatless links are in order. And let’s talk about the beer selection: WVRST’s Cicerone-certified staff will help you navigate the bar’s 600-plus craft bottles and cans and 24 taps, six of which are devoted to rising local breweries like Sawdust City, Bench, and Clifford. The draft lines are cleaned every couple of weeks, too, keeping everything flowing at its optimum temperature and flavor in ways rarely seen throughout Canada—or the rest of North America, for that matter.
