Hats off to chefs Denny Antonino and Ynigo Santos of Your Local in Manila’s Legaspi Village. Santos told The New York Times that he modeled his restaurant after eateries in Williamsburg, and from the subway-tiled walls and Filson bulbs to the open kitchen, that influence is apparent. But this menu—it’s no copycat. We’re obsessed with the pomelo salad (shrimp, pickled quail eggs, winged beans, wild rocket, yuzu, nam jim, and Thai coconut “ice cream”), the burnt onion and chorizo jam sandwich on a squid ink bun (below), and the torched salmon donburi with ebiko and shiitake black rice (above). Lord have mercy—Brooklyn wishes it had it this good.
