It took Liz and Jesse Huot two years to transform Grind Burger Kitchen from a hit food truck into the brick-and-mortar spot for a house-trimmed burger in Louisville, KY. While you’re welcome to pile on such premium toppings as spicy dill pickles, smoked tomato ketchup, ghost chili mayo, and crisp pork belly, first-timers should really order Grind’s signature B&B burger, which pairs a grass-fed patty with brie, bacon, and habanero jam. No substitutions or additions are allowed on that option, but the Huots are right when they say, “Trust us, it’s awesome.” Also of note are the sides (kale salad, brown-butter brussels sprouts, hand-cut fries) and a beer menu that highlights Kentucky breweries like West Sixth, Goodwood, and Against the Grain.
