Yukhoe, or Korean-style steak tartare, is a must-try in Seoul, and an easy dish to knock off your list when sampling bindaetteok (mung-bean pancakes), sundae (firehose-thick blood sausages), and gimbap (Korean sushi) at nearby Gwangjang Market. Just up the block, near exit 9 of the Jongno Oh-ga station, is the third and latest branch of O.G. yukhoe haunt, Jamaejib. Two sisters have run the place for 40-plus years, seasoning their high-quality, fresh raw meat with sesame oil and a subtle “secret” seasoning. Drop an egg yolk on top, add some salt or vinegar to taste, and alternate the strips of beef with bites of pea sprouts and Asian pear. It’s clean, light, and totally memorable.
