Oysters, mussels, scallops, abalone, and lobster—they do it all at Freycinet Marine Farm in Coles Bay, Tasmania. Place your order at the window, then take a seat at one of several covered picnic tables. The seafood here is harvested from half a dozen dedicated growing areas in the nearby Great Swanport river estuary and off-shore marine zones in Freycinet National Park. The water is so clean and pure in this corner of the world, the farm neither scrubs nor depurates its shellfish before it hits your plate. The oysters are served as simple (with lemon) or complex (grilled with bacon and a spicy sauce) as you please; mixed platters are frequently requested. If you want a behind-the-scenes look at the oyster farm, pre-book a 45-minute public tour for $50 AUD ($36 USD). If you’re just there to eat, try to time your visit before 11 a.m. or after 2 p.m. to avoid the swarms of locust-like tourists that pour in by the vanload.
