The food truck revolution started centuries ago in Fukuoka, Japan, with pop-up stalls lining the streets since the Edo period. Known locally as yatai, the stands offer seating but are still mobile. Ebi-chan is stationed outside Reisen Park and is helmed by master bartender Akio Ebina. Locals queue for up to an hour for his classic cocktails made with fresh fruit and simple bar snacks like torched camembert served with saltines, ricotta, and figs. Despite what food bloggers say, ordering at a yatai can be intimidating as hell for non-Japanese speakers; Ebi-chan, fortunately, has a small English menu. Just don’t expect much personal space. The more popular the truck, the more packed the sardine can, and the more locals you’ll befriend between that first awkward order and last call.
